
Our whiskies are matured in a traditional granite warehouse in Aberdeenshire.
As the spirit ages it breathes through the walls of its cask which contract slightly in winter and expand in summer. This breathing allows it to expel harsher alcohols and absorbe moisture and oxygen, the latter of which oxidises some of the elements in the whisky and thus softens the raw spirit.
In our traditional warehouse evaporation is lower, but the strength of the spirit drops more quickly producing whiskies for drinking!
